At the core of Sushi JeJu is Chef Masa, our master sushi chef with 30+ years of experience. His dedication to the craft, deep knowledge of traditional methods, and attention to detail bring unmatched quality to every plate. Masa’s leadership and expertise have helped make Sushi JeJu one of northern Colorado’s most respected and beloved sushi destinations.
We’ve also had the honor of being a starting point for Food Network Star Justin Warner, who began his culinary journey with us in 2004.
“Sushi JeJu was the first restaurant I applied to after moving to Fort Collins,” Justin recalls. “Brian Yoo took me under his wing, teaching me about management and how to be a gracious host.”
Justin also learned the art of sushi and flavor under Chef Masa’s mentorship.
“Masa trained the waitstaff to describe the flavor so customers could better understand what they were ordering. That’s how I learned to articulate taste—the creamy, metallic brine of uni, the oiliness of toro, the pop of ikura,” he said.
“Working with Masa changed how I thought about food. He didn’t just prepare sushi—he taught us how to understand it.”
